How did the idea of “Déjeuner avec le Chef” come along ?

“Déjeuner avec le Chef” is all about freeing our guests from the hassle of having to choose.  At the same time, it allows us to showcase the authentic Le Cirque experience : a fun, playful, ingredient-driven cuisine from France with hints of Italy, created in New York.  And, as the French saying goes : “eat well, laugh often, love abundantly”.  The concept is simple: it’s about us taking care of you…  come and have a three-course meal before anyone realizes you have even left the office.  As the French say (again, the French!) : “café dans l’heure” and coffee in us, for a steal of 125 AED, every day of the week !

Now that we know about “Déjeuner avec le Chef” at Le Cirque, let’s find out a little bit more about this Chef that we are lunching with.

Is your life a circus ? Yes : a traveling circus.  I started out back home in Cape Town, serving traditional South-African fare, then I leaped to England, where I joined Belle and the Dragon, a perky gastro-pub.  I jumped to the Channel Islands where I went to try my hand at  Italian cuisine before going back to the number 1 hotel in South Africa, the Table Bay, at their gastronomic restaurant, the Atlantic Room.  Then came the One & Only hotel, where I joined the opening team of Maze by Gordon Ramsey.  Because, you just need to keep on going, I flew to Dubai and the Atlantis : Seafire and Ossiano.  By this time, I was Head Chef and moved on to yet another adventure in Abu Dhabi, after a phone call from Marco Pierre-White before the next challenge in Dubai with the team at Marina Social.

Now, is Le Cirque a circus ?

In the kitchen, for sure, no.  A kitchen needs to be a well-oiled machine, where everybody knows their role and achieves their goals.  We aim at delivering good honest food.  There is nothing on our menu that is overly pretentious.  We cook classic recipes redefined.  The circus is in the dining room.  As the French say (again and again the French !) : “La vie est un cirque.”  The setting is bright, luminous, chic.  Yet the fine dining turns into fun dining : a relaxed, happy, entertaining environment, with cheerful table-side service from Sole Amandine to Veal Shank and the all-time classic Crêpe Suzette !
